Green Gourd and Mutton
November 1, 2010I tried this recipe with my own creation of taste. It is very simple to prepare. Put 250 gms of mutton pieces in a pressure cooker with 2 cups of water. Crush 5 pieces of large cardamom and 3 pieces of small green cardamom, 1 small piece of cinnamon and put in the cooker. Keep it on flames until there are repeated whistles for 7/8 times. This process would make the meat tender. When done take out the pressure completely and keep the meat aside.
Prepare a vessel to cook the meat. Heat 2 spoons of oil and fry finely small chopped 2 medium sized onion. Fry till the onions turn brown. When done put small cubes of 1 medium sized tomato and fry till oil starts to leave.
Put the boiled mutton into the fried ingredients with 4 medium sized cut green gourd. Stir for 5 minutes. Take a cup of yogurt add a small spoonful of turmeric, salt and red chili powder. Stir the yogurt and mix with the meat. Stir and keep the vessel covered. Make a dry paste of a large spoon full of cumin seeds and coriander seed. After 10 minutes sprinkle into the mutton curry. Add a cup of water. Stir and cover till done.
Enjoy with hot rice or roti !!
